Arugula & Grilled Kiwifruit Salad with Pistachios

Ingredients
This salad is anything but boring with peppery arugula, smoky-sweet grilled kiwifruit, and the crunch of pistachios. Drizzled with a fresh kiwifruit vinaigrette, it’s bright, bold, and totally picnic-worthy.
Ingredients:
- Handful of arugula
- 2 Chilean kiwifruit, sliced and grilled (see below)
- 2 tbsp shelled pistachios
Kiwifruit Vinaigrette Dressing
This bright, zesty dressing is what happens when salad gets a glow-up. The kiwifruit purée brings tangy freshness, olive oil adds richness, and a splash of vinaigrette ties it all together. Drizzle it over greens, grain bowls, or grilled veggies. It’s a total upgrade!

Ingredients:
- 2 tbsp kiwifruit purée
- 1 tbsp olive oil
- 1 tbsp light vinaigrette
Directions
- Grill kiwifruit slices (see next recipe).
- Toss arugula and pistachios.
- Whisk dressing ingredients and drizzle over salad.
Instructions for Kiwifruit Vinaigrette Dressing
- Whisk all ingredients together in a small bowl or shake in a jar until combined.
- Taste and adjust to your liking—add more kiwifruit for tang or more oil for smoothness.
- Use immediately or refrigerate for up to 3 days.
