Ingredients

Make a quick open-faced pie with nectarines, peaches or plums from Chile. It’s the perfect size for 4-6 people who would appreciate a little bite of something sweet.

Ingredients:

1 pie crust (we used store bought)

4-6 tbsp apricot jam

Optional: ½ cup soft cheese like Boursin or brie

2-4 ripe Chilean nectarines, peaches or plums, thinly sliced (you need enough fruit to line the pie crust so the number of fruit will vary depending on how large they are)

1 tbsp heavy cream

Optional:

Fresh herbs (such as thyme or basil), finely chopped

Drizzle with honey before serving

Directions

  1. Preheat your oven to 400°F (or follow the directions on store bought pie crust)
  2. Roll out the pastry onto a baking sheet lined with parchment paper.
  3. Spread the jam and if using cheese, evenly distribute over the pie crust.
  4. Arrange the nectarine slices over the herbs, slightly overlapping them.
  5. Fold the edges of the dough up around the filling, leaving the center open.
  6. Brush the exposed dough with cream using a pastry brush.
  7. Bake for 25-30 minutes, or until the pastry is lightly golden.
  8. Optional: Drizzle with a little honey for an extra touch of sweetness. If you add the cheese, it is complimented by a little touch of herbs too.
