Ingredients

Is this a tasty breakfast, dessert or a snack? You decide! A fresh nectarine or peach from Chile adds natural sweetness to this pudding and brings a taste of summer during our winter season. Chia seeds are a wonderful ingredient as they are a filling, nutrient dense food that is also a source of fiber.

Serves 2-4 (two meal-sized portions, 4 snack-sized portions)

Ingredients

1 cup (250 mL) milk (your choice of milk option)

1 cup (250 mL) fresh nectarine or peach from Chile, roughly chopped

7 tbsp (105 mL) chia seeds (black or white)

Optional: maple syrup or honey, to taste

Optional: Extra diced fruit for serving

Directions

Blend together milk with fruit until smooth. Stir in chia seeds. Taste and add sweetener to suit personal preference. Transfer to two mason jars and store in the fridge a minimum of 4 hours, but preferably overnight.

To serve, top with more fresh Fruits from Chile like diced plums, blueberries and more nectarine.
